Hmm well matroska.org uses the term transmux so I assumed they would know the correct terminology. I’ll take your word for it as either way “encoding” it is not.

“Multiplexing” would be the technically correct term, and “muxing” would be the more common one. The “trans” prefix is unnecessary.
