Each fansub does something a bit different whether it is the font style/size or colors of the text, but when I compare fan subs with unlicensed shows to official subs on DVDs there are severely more differences.
DVDs - From most recent DVDs I've purchased, the subtitles have always been yellow or the generic white. White is good, but yellow just pierces my eyes and it feels a bit distracting, but maybe it is just me. Their positioning is normally slightly higher than fan subs (where fan subs normally have TEXT on the bottom, but a little gap between the bottom edge and the text - DVDs normally have a huge gap).
Official subs occassionally leave out -chan, -san, ect which bothers me because you lose the level of relationship they have for each other when it happens (so you read and listen specifically for the honorific).
This isn't fan subs vs DVD subs, but it is a lot easier to talk about the differences in that sense first.
What are your preferences in subtitles? Text all the way at the bottom instead of DVD - hover around the 20% area? Color, font? Do you want the honorifics in the subs or not? Do you like signs subtitled on the picture or off on a side of the screen (Place Promised DVD - if I remember correctly, they either have the subs over the Japanese text or they have it to the side of it instead of off the main view which blocks the art). Do you like when fan subs do "Translator's Note:" explaining something Westerners may not understand? Do you like when different people are talking at the same time for there to be different colors? I can go on. I'm certain that everyone enjoys accurate subs, so this isn't the place for that.
