1 Which is what works, they can assign whichever name they like, relevant to the plot of course.
2 Again basing this off the game, a creative group can be created that help the protagonist and add flavor towards story progression. There weren't any permanent companions in the game because it would drag gameplay, and unbalance the rpg setting, also more work for the devs.
3 I already know such an anime will never be realized, although I was assuming what it would be like.
The TES games have one goal in mind, which is portraying the hero that saved Tamriel/completion of the main quest, everything else is irrelevant. They never give any detailed background on such characters as they let the viewers, interpret the characters into they're own playthroughs. So basically, as long as the anime stays true to the main quest there could be an infinite amount of companions, or whatever.
