watch the series. if you didnt understand the last 2 episodes or didnt like them, watch end of evangelion (or even if you really enjoyed the series... its an alternate ending to the series, its more enjoyable than the last 2 episodes anyways - not that last 2 are terrible, but its just a very different presenatation.)
dont bother with death & rebirth. death is a recap of the 24 episodes, and rebirth is part 1 of end of evangelion.
only the first part of the remake is out ATM. the 2nd is going to be released on bluray next month i believe. the other 2 havent even seen a formal name released yet.
