Well, since you didn't give me a genre... some of the classics obviously, Trigun(Action), Cowboy Bebop(Action), Evangelion(Robot Action, Psychological), Wolf's rain(Damn near anything by BONES) Some newer ones are Gurren Lagann(Epic+GAR), Hayate no Gotoku(Comedy, especially for people who have seen a lot of anime, since there are so many references), Birdy the Mighty Decode(Classic action with a fresh feel to it), Seto no Hanayome(Comedy+tiny bit of romance+GAR ending), Baccano!(Deep storyline with great directing style), FLCL(Needs/has no explanation), Genshiken(OTAKU OTAKU OTAKU), Kure-nai(Fantastic atmosphere throughout the show), Mahoraba(Romance-I don't know why, but I'm just a sucker for this show), Welcome to the NHK(Psychological/romance lolwtf?).
Didn't include VERY recent ones like fall and on.
I'm sure there are many more great ones I can't remember.
